Monday night tea.... always weekend leftovers. I always try make sure I have made enough on a Sunday so it's a super easy Monday meal. We had leftover roasties (contrary to some people's opinion, white potatoes are very healthy, especially if you leave the skins on, and actually eating potatoes that were cooked the day before, then reheated, provides a great source of resistant starch, which feeds your good bacteria in your gut) along with veggies.
I added some grilled sardine fillets for an Omega 3 hit to help with growing brains (the children's and mine 😉). What are you favourite leftover meals?
